Description

The Mont Blanc Cake is a sophisticated dessert inspired by the snow-capped Mont Blanc mountains, featuring rich chestnut cream, airy meringue, and whipped cream.


Ingredients

  • 4 large egg whites
  • 200g granulated sugar
  • 300g chestnut purée
  • 100ml heavy cream
  • 1 tsp vanilla extract
  • 50g powdered sugar
  • 1 sponge cake layer (optional)

Instructions

  1. Preheat the oven to 120°C (250°F) and line a baking sheet with parchment paper.
  2. Whip the egg whites until soft peaks form, gradually adding granulated sugar until stiff peaks form.
  3. Pipe the meringue into small circles and bake for 90 minutes. Let them cool completely.
  4. In a bowl, mix chestnut purée with powdered sugar and vanilla extract until smooth.
  5. Whip the heavy cream until stiff peaks form.
  6. Assemble by placing a meringue base, topping with chestnut purée, and finishing with whipped cream.
  7. Refrigerate for an hour before serving.
